How to Make Delicious Sri Lankan Milk Rice Perfectly - Traditional Kiribath Recipe

In Sri Lanka, whether it is for the New Year, a wedding, a birthday, or any auspicious beginning, we always take the first step with a plate of Kiribath (Milk Rice). Making Kiribath with the perfect texture and a rich, creamy coconut flavor is a skill everyone loves to have. As the ceremonial first step of our website, today we are sharing how to perfectly prepare this delicious, warm Kiribath, which is best enjoyed with a spicy Lunu Miris or your favorite side dish.

๐Ÿฅฃ Ingredients:

  • ​Raw Rice (White or Red Kakulu Rice) - 2 cups
  • ​Thick Coconut Milk (First extract / Mitikiri) - 1.5 cups
  • ​Water - 3.5 to 4 cups (to cook the rice until soft and mushy)
  • ​Salt - 1.5 teaspoons (or to taste)

๐Ÿณ Step-by-Step Instructions:

Step 1 (Cooking the Rice):

First, wash the rice thoroughly and place it in a pot. Add about 3.5 cups of water and bring it to a boil. Since Kiribath requires the rice grains to be well-cooked and soft, add slightly more water than you would for regular rice.

Step 2 (Preparing the Coconut Milk):

While the rice is cooking, add the salt to the thick coconut milk and mix well until completely dissolved. Set it aside.

Step 3 (Adding Coconut Milk):

Once the water has fully absorbed and the rice is softly cooked, reduce the heat to low. Now, pour the salted coconut milk into the rice. Mix the rice and coconut milk thoroughly using a spoon.

Step 4 (Simmering to Perfection):

Cover the pot and let it simmer over very low heat for about 5-10 minutes until the rice fully absorbs the milk and the coconut milk cooks through. Once you get that rich, aromatic aroma, remove the pot from the stove.

Step 5 (Shaping and Serving):

Transfer the hot Kiribath onto a clean flat tray or board. Using a piece of banana leaf or a clean plastic sheet, flatten and smooth the top surface. Let it cool slightly, then cut it into your preferred shapes (traditionally diamond or square shapes).

๐Ÿ’ก Chef's Tip for Extra Flavor:

​When mixing the coconut milk into the rice, you can add a small piece of cinnamon and 2 crushed cardamoms. This gives the Kiribath a wonderful royal aroma and an incredible depth of flavor!
